Did you read the tutorial at EG, and view the screenshots?

It did exactly what you were asking for...To get games from the xbox DVD, you need to FTP to it, browse the dvd directory, and download the files to your PC

Then when it's on your PC you simply FTP the files back to it, in a games\foldername directory.

There are also programs available for the actual xbox which will let you do this directly from the xbox dvd-->xbox HD.
